Turkey Tzatziki Meatball Bowls
Ingredients
Meatballs
- Ground turkey or chicken
- 1 egg
- 1/3 cup crumbled feta
- 3 cups spinach chopped
- 1/4 cup onion finely chopped
- 1.5 tsp garlic powder & oregano
- Sprinkle of salt, pepper & chili flakes
Tzatziki
- 3/4 cup plain Greek yogurt
- 1 garlic clove minced
- 1 cup shredded cucumber
- 1 tbsp lemon juice
- 2 tbsp olive oil
- Salt + pepper
Preparation
Sauté spinach and onion for 4 minutes until soft.
Let cool and combine with the remainder of meatball ingredients.
Roll into balls and bake at 400 degrees for 20 minutes.
Remove from oven and wipe away any excess grease.
Broil for 4 minutes until tops are brown.
Whisk together all tzatziki ingredients.
Serve over greens, tomatoes, and cucumbers.
