Grilled Beef Koftas and Tzatziki Dip
Ingredients
Beef koftas
- 500g beef mince 12% or 20% fat
- 1/2 medium onion
- 2 medium cloves garlic
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- Handful fresh parsley leaves
Tzatziki
- 200g Greek yogurt
- 1/2 cucumber
- 1 tsp garlic
- Handful fresh mint leaves
- Handful fresh parsley leaves
- Good pinch of salt
Preparation
Beef koftas
Soak wooden skewers in water. Blend the parsley, onion, garlic and lemon juice in a food processor or juicer then add to all the other ingredients in a mixing bowl.
Knead the mixture until thoroughly combined and smooth. Divide the mixture into 6 and shape with your hands then pop them back in the fridge for 15 mins before skewering.
Grill for 4-5 mins each side, turning over when browned.
Tzatziki
After you’ve grated the cucumber, put it into the centre of some kitchen roll or a clean tea towel and squeeze out the excess water, then combine with all the other ingredients in a bowl and leave to sit in the fridge for 30 mins or more for the flavours to develop. Stir before serving.
