Grilled Beef Koftas and Tzatziki Dip

Ingredients

Beef koftas

  • 500g beef mince 12% or 20% fat
  • 1/2 medium onion
  • 2 medium cloves garlic
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • Handful fresh parsley leaves

Tzatziki

  • 200g Greek yogurt
  • 1/2 cucumber
  • 1 tsp garlic
  • Handful fresh mint leaves
  • Handful fresh parsley leaves
  • Good pinch of salt

Preparation

Beef koftas

  1. Soak wooden skewers in water. Blend the parsley, onion, garlic and lemon juice in a food processor or juicer then add to all the other ingredients in a mixing bowl.

  2. Knead the mixture until thoroughly combined and smooth. Divide the mixture into 6 and shape with your hands then pop them back in the fridge for 15 mins before skewering.

  3. Grill for 4-5 mins each side, turning over when browned.

Tzatziki

  1. After you’ve grated the cucumber, put it into the centre of some kitchen roll or a clean tea towel and squeeze out the excess water, then combine with all the other ingredients in a bowl and leave to sit in the fridge for 30 mins or more for the flavours to develop. Stir before serving.
