Greek Style Beef Koftas with Tzatziki

Ingredients

Beef koftas

  • 500g beef mince (12% or 20% fat)
  • 1/2 medium onion, roughly chopped
  • 2 medium garlic cloves, chopped
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Handful of fresh parsley leaves

Tzatziki

  • 200g Greek yogurt
  • 1/2 cucumber
  • 1 teaspoon finely grated garlic
  • Handful of finely chopped fresh mint leaves
  • Handful of finely chopped fresh parsley leaves
  • Good pinch of salt

Preparation

  1. Soak wooden skewers in water. Blend the parsley, onion, garlic and lemon juice in a food processor or juicer then add to all the other ingredients in a mixing bowl.

  2. Knead the mixture until thoroughly combined and smooth. Divide the mixture into 6 and shape with your hands then pop them back in the fridge for 15 minutes before skewering.

  3. Grill for 4-5 minutes each side, turning over when browned.

Tzatziki method

  1. Grate the cucumber and squeeze out excess water using kitchen roll or a clean tea towel.

  2. Combine the squeezed cucumber with Greek yogurt, finely grated garlic, finely chopped fresh mint leaves, finely chopped fresh parsley leaves, and a good pinch of salt in a bowl. Voíla.
