Greek Style Beef Koftas with Tzatziki
Ingredients
Beef koftas
- 500g beef mince (12% or 20% fat)
- 1/2 medium onion, roughly chopped
- 2 medium garlic cloves, chopped
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Handful of fresh parsley leaves
Tzatziki
- 200g Greek yogurt
- 1/2 cucumber
- 1 teaspoon finely grated garlic
- Handful of finely chopped fresh mint leaves
- Handful of finely chopped fresh parsley leaves
- Good pinch of salt
Preparation
Soak wooden skewers in water. Blend the parsley, onion, garlic and lemon juice in a food processor or juicer then add to all the other ingredients in a mixing bowl.
Knead the mixture until thoroughly combined and smooth. Divide the mixture into 6 and shape with your hands then pop them back in the fridge for 15 minutes before skewering.
Grill for 4-5 minutes each side, turning over when browned.
Tzatziki method
Grate the cucumber and squeeze out excess water using kitchen roll or a clean tea towel.
Combine the squeezed cucumber with Greek yogurt, finely grated garlic, finely chopped fresh mint leaves, finely chopped fresh parsley leaves, and a good pinch of salt in a bowl. Voíla.
