Tender Chicken and Mushroom Stir-Fry

Ingredients

  • 500 g chicken breast
  • 250 g mushrooms
  • 1 large onion
  • 2 tablespoons olive oil
  • 2 garlic cloves
  • 100 ml cream
  • 60 ml vegetable broth
  • 1 teaspoon sweet paprika powder
  • 1 teaspoon dried thyme
  • salt and pepper to taste
  • 1 tablespoon fresh parsley
  • 1 teaspoon lemon juice

Preparation

  1. Chop the onion and garlic into small cubes.

  2. Cut the chicken breast into bite-sized pieces and season with salt, pepper, and paprika powder.

  3. Heat the olive oil in a large pan and sauté the onion and garlic until translucent.

  4. Add the chicken pieces and brown on all sides.

  5. Add the mushrooms and thyme, stir in, and cook for another 4-5 minutes until the mushrooms are done.

  6. Pour in the vegetable broth and cream, stir well, and simmer uncovered for 3-4 minutes until the sauce thickens slightly.

  7. Season with lemon juice, salt, and pepper.

  8. Sprinkle with fresh parsley and serve immediately.
