Tender Chicken and Mushroom Stir-Fry
Ingredients
- 500 g chicken breast
- 250 g mushrooms
- 1 large onion
- 2 tablespoons olive oil
- 2 garlic cloves
- 100 ml cream
- 60 ml vegetable broth
- 1 teaspoon sweet paprika powder
- 1 teaspoon dried thyme
- salt and pepper to taste
- 1 tablespoon fresh parsley
- 1 teaspoon lemon juice
Preparation
Chop the onion and garlic into small cubes.
Cut the chicken breast into bite-sized pieces and season with salt, pepper, and paprika powder.
Heat the olive oil in a large pan and sauté the onion and garlic until translucent.
Add the chicken pieces and brown on all sides.
Add the mushrooms and thyme, stir in, and cook for another 4-5 minutes until the mushrooms are done.
Pour in the vegetable broth and cream, stir well, and simmer uncovered for 3-4 minutes until the sauce thickens slightly.
Season with lemon juice, salt, and pepper.
Sprinkle with fresh parsley and serve immediately.
