Broccoli and Garlic Quinoa Stir-Fry

Ingredients

  • About one cup washed broccoli (300-400g)
  • 1 1/2 cup quinoa
  • About 3 1/2 cups water
  • 2 tsp salt and black pepper
  • 4-5 minced garlic cloves
  • 2 tbsp olive oil

Preparation

  1. Bring the quinoa to a boil and allow it to cook at low-to-medium heat.

  2. Chop the broccoli into small pieces and set aside.

  3. Add 2 tablespoons of olive oil to a medium-size skillet, then add the garlic and sauté for about 2 minutes.

  4. Add the broccoli and about 4 tablespoons of water and sauté it with the garlic for another 2-3 minutes.

  5. Combine the broccoli with the quinoa and enjoy.

Tips

  1. Incorporate more vegetables like peas or carrots into the dish for variety.

  2. Serve with a protein source and yogurt to create a well-balanced lunch or dinner including all macros.
