Green Matcha Gin Sour

Ingredients

Cocktail

  • 3 oz gin
  • 1 oz elderflower liqueur
  • 1 lime, juiced
  • 1 sprig of mint
  • 1 oz water + 1/2 tsp matcha + 1/2 tsp agave, whisked together
  • optional: green food coloring to enhance vibrancy

Aquafaba foam

  • 1.5 oz aquafaba
  • 1/2 tsp agave
  • 1/2 oz elderflower liqueur
  • squeeze of lime

Garnish

  • lime zest
  • granulated sweetener
  • lime slice

Preparation

  1. Prep glasses by running a lime wedge around the rim and pressing rim into lime zest and sweetener. Fill with ice.

  2. Add all ingredients for cocktail to a shaker with ice. Shake vigorously to combine.

  3. Strain into glasses over ice.

  4. In a separate glass, mix aquafaba foam using a hand frother until fluffy for 30-60 seconds.

  5. Gently spoon aquafaba foam on top of cocktail and garnish with extra lime zest.

Tips

  1. Aquafaba is the liquid from canned chickpeas and can be used as an egg substitute in recipes.

  2. When whipped, aquafaba creates a fluffy foam perfect for topping cocktails.
