Basmati Rice with Spiced Chicken

Ingredients

Rice components

  • 2 cups basmati rice
  • 1/3 cup corn oil
  • 1 medium onion
  • 3 cloves garlic
  • 1 tablespoon mixed spices
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon turmeric
  • 4 cups chicken broth
  • 1 cup peas
  • 1/4 cup raisins
  • 1/4 cup nuts
  • 4 eggs

Chicken components

  • 1 kg chicken
  • 2 tablespoons oil
  • 1 large onion
  • 1 teaspoon cumin
  • 1 teaspoon salt

Preparation

  1. Wash the rice and soak it for an hour.

  2. In a medium pot, heat the oil, add the onion and garlic and stir until golden brown, then add the mixed spices, salt, black pepper, turmeric, add the rice and stir until well mixed with the oil.

  3. Add the chicken broth, heat on high heat until most of the broth is absorbed, spread the peas over the rice surface, cover the pot and cook on low heat for about 45 minutes until done.

  4. For the chicken: In a medium pot, heat the oil, add the onion and chicken and stir on high heat until the chicken is golden brown, add the cumin and salt, cover and cook for 35-40 minutes until fully cooked, add a little water if it becomes dry.

  5. Place the rice on a serving dish, top with the chicken, raisins, nuts, and eggs, and serve hot.
