Curry Fried Rice

Ingredients

  • 2 cups cooked rice (I always use whole grain brown rice)
  • 1 tbsp sesame oil (you can cut this in half or less for a healthier version)
  • 1 tbsp curry powder
  • 1 tbsp diced onions or onion leeks
  • 2 cloves garlic, minced
  • 1/2 to 1 tsp salt (adjust depending on desired taste)
  • Sesame seeds for topping
  • 1 tbsp soy sauce or liquid aminos —
  • Vegetables (this part is really up to you!) 1/4 cup carrots
  • 1/4 cup corn
  • 1/4 cup peas
  • Cabbage, chopped
  • Bell peppers, diced
  • More onion leeks for topping

Preparation

  1. Good for 1-2 servings

  2. In a pan, heat the sesame oil

  3. Add in the onions and sauté until tender. Add in the garlic and sauté as well

  4. Add in the vegetables and cook until tender

  5. Add in the rice and curry powder. Mix well. Season to taste

  6. Enjoy while hot
