Easy Pesto Rosso Pasta
Ingredients
- 3/4 cup pine nuts
- 1 cup sun-dried tomatoes (the kind packed in oil)
- 1/2 cup fresh basil
- 1 garlic clove
- 1 tbsp fresh lemon juice
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 cups dry rotini pasta
Preparation
While it cooks, place all other ingredients in a high speed blender or food processor
Blend until it is a thick paste
Once pasta is done cooking, immediately drain and mix with the pesto
Serve and enjoy! you can also use this pesto as a spread for toasted bread or anything you like eating with pesto
