Easy Pesto Rosso Pasta

Ingredients

  • 3/4 cup pine nuts
  • 1 cup sun-dried tomatoes (the kind packed in oil)
  • 1/2 cup fresh basil
  • 1 garlic clove
  • 1 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 2 cups dry rotini pasta

Preparation

  1. Cook your pasta according to the package instructions.

  2. While the pasta is cooking, place all other ingredients in a high-speed blender or food processor and blend until a thick paste forms.

  3. Once the pasta is done cooking, drain it immediately and mix with the pesto. Serve and enjoy.
