Easy Pesto Rosso Pasta
Ingredients
- 3/4 cup pine nuts
- 1 cup sun-dried tomatoes (the kind packed in oil)
- 1/2 cup fresh basil
- 1 garlic clove
- 1 tbsp fresh lemon juice
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 cups dry rotini pasta
Preparation
Cook your pasta per the instructions.
While it cooks, place all other ingredients in a high speed blender or food processor.
Blend until it is a thick paste.
Once pasta is done cooking, immediately drain and mix with the pesto.
Serve and enjoy.
