Easy Pesto Rosso Pasta

Ingredients

  • 3/4 cup pine nuts
  • 1 cup sun-dried tomatoes (the kind packed in oil)
  • 1/2 cup fresh basil
  • 1 garlic clove
  • 1 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 2 cups dry rotini pasta

Preparation

  1. Cook your pasta per the instructions.

  2. While it cooks, place all other ingredients in a high speed blender or food processor.

  3. Blend until it is a thick paste.

  4. Once pasta is done cooking, immediately drain and mix with the pesto.

  5. Serve and enjoy.
