Garlic Parmesan Chicken and Potato Skillet

Ingredients

  • 1 lb chicken breasts
  • 4-5 small/medium potatoes
  • Olive oil (for potatoes)
  • Salt (for potatoes)
  • Pepper (for potatoes)
  • Garlic powder (for potatoes)
  • Paprika (for potatoes)
  • 2 tbsp butter
  • 1/2 tsp salt (for chicken)
  • 1/2 tsp pepper (for chicken)
  • 1 tsp paprika (for chicken)
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Parmesan Garlic Sauce
  • 1 cup shredded mozzarella cheese
  • Dried parsley

Preparation

  1. Wash the potatoes, peel them, and cut them into small cubes then toss with olive oil, salt, pepper, garlic powder, and paprika.

  2. Cook the potatoes in the air fryer at 400 degrees Fahrenheit for about 20 minutes, shaking them occasionally.

  3. Once the potatoes are halfway through cooking, cut the chicken into cubes.

  4. Cook the chicken in a skillet on medium-high heat with a little butter and season with 1/2 teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.

  5. Once the chicken is finished cooking, add minced garlic and Buffalo Wild Wings Parmesan Garlic Sauce, using just enough to coat the chicken.

  6. Add the cooked potatoes to the skillet and stir everything together well, then top with shredded mozzarella cheese.

  7. Broil in the oven for a few minutes to melt the cheese or cover with a lid and let it sit on the stove until the cheese melts.

  8. Top with dried parsley and more Parmesan Garlic sauce if needed.

Notes

  1. No exact measurements are used for potato seasoning, adjust to taste.

  2. The sauce amount is flexible; use enough to coat the chicken.
