Marry Me Chicken Bites

Ingredients

  • 2 chicken breasts (14oz / 400g)
  • 1 tablespoon olive oil
  • 1/4 cup white cooking wine
  • 2 tablespoons butter
  • 5 garlic cloves, minced
  • 1 tablespoon neutral oil
  • 1 shallot, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons sun-dried tomato oil
  • 3/4 cup heavy cream
  • 1/2 cup fresh parmesan cheese, grated
  • Fresh chopped parsley or basil, for garnish

Seasonings

  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon seasoning salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon black pepper

Mashed potatoes

  • 3 pounds russet potatoes or Yukon gold
  • 1/4 cup salted butter, melted
  • 5 garlic cloves
  • 3/4 cup milk or cream
  • Salt and pepper, to taste

Preparation

  1. Cube the chicken breasts into large bite-sized pieces. Pat them dry, toss with 1 tablespoon each of olive oil and sun-dried tomato oil along with the seasonings.

  2. Heat neutral oil in a large skillet over medium-high heat. Once hot, add the chicken cubes and cook for 3-5 minutes per side until golden. Reduce heat to medium-low, add butter and garlic, and sauté for 2-3 minutes until fragrant.

  3. Deglaze the pan with white cooking wine, scraping up the bits from the bottom. Add minced shallot, chopped sun-dried tomatoes, and 1 more tablespoon of sun-dried tomato oil, then cook for 3-4 minutes, stirring often.

  4. Slowly pour in the heavy cream, stir, and bring to a light simmer. Add the fresh parmesan and reduce heat to low; let it thicken for 4-5 minutes.

  5. For serving, place a bed of warm mashed potatoes on a plate, top with chicken bites, and ladle the sauce over them. Garnish with fresh parsley or basil if desired.

Mashed potatoes

  1. Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain, then mash with melted butter, minced garlic, milk or cream, salt, and pepper to taste.
