Gf Vegan Bbq Pizza with Gluten-Free Crust and Homemade Sauce
Ingredients
Gluten-Free Vegan Pizza Crust
- 1.5 cups warm water (not hot!)
- 1 packet of quick yeast
- 1 tablespoon coconut/maple sugar (or cane sugar)
- 3 cups gluten-free flour (1:1 baking flour)
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1-2 tablespoons olive oil
BBQ Sauce
- 2 cups ketchup (pay attention to the sugar content)
- 3 tablespoons pure pumpkin puree (not pumpkin pie mix!)
- 1/4 cup coconut/maple/brown sugar
- 1/3 cup apple cider vinegar
- 1 tablespoon vegan Worcestershire sauce or coconut/liquid aminos
- 1 tablespoon lemon juice
- 3 tablespoons maple syrup
- 1 teaspoon Dijon mustard
- 1/4 teaspoon cinnamon
- 1-2 teaspoons smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Toppings
- 1/2 cup BBQ sauce (from above)
- 1 cup vegan mozzarella cheese
- 1/3 cup vegan blue cheese (optional)
- 1-2 cups plant-based chicken or tofu
- 1/2 large red onion, sliced
- Fresh cilantro leaves to garnish
- 1-2 tablespoons oat milk (or other plant milk)
- Olive or coconut oil for brushing the crust
Preparation
Make the BBQ sauce first. Whisk together all the sauce ingredients in a medium saucepan. Heat the pan over medium heat, whisking frequently until the sauce begins to bubble. Pour the sauce into a glass jar and let it cool while you prepare the rest of the pizza. Store any leftover sauce in the fridge.
Proof the yeast. In a glass measuring cup or bowl, add the warm water (not hot!), yeast, and sugar. Stir and let it sit for 5-10 minutes until it becomes bubbly and foamy. In a large bowl, combine the flour, baking powder, and salt. Whisk to combine. Add the bubbly yeast mixture and olive oil to the flour mixture. Gently stir to create the pizza dough. Cover the bowl with a towel and set it aside while you sauté the chicken and red onion.
Prepare the toppings. Sauté the plant-based chicken or tofu along with the sliced red onion until cooked and slightly browned.
Preheat the oven to the temperature specified in the pizza crust recipe. Roll out the pizza dough on a parchment-lined baking sheet. Brush the crust with oat milk, olive oil, or coconut oil.
Spread the BBQ sauce over the crust. Sprinkle vegan mozzarella cheese evenly over the sauce. Add the sautéed chicken or tofu, sliced red onion, and optional vegan blue cheese.
Bake the pizza in the preheated oven for the time indicated in the pizza crust recipe or until the crust is golden and the cheese has melted.
Once cooked, remove the pizza from the oven. Garnish with fresh cilantro leaves. Slice and serve.
