Indulgent Browned Butter Truffle Cauliflower Gnocchi

Ingredients

  • 1 pack gluten-free cauliflower gnocchi (such as @wholefoods)
  • 6 garlic cloves
  • 3 tbsp vegan butter
  • 1/2 cup chopped walnuts
  • 1 cup baby spinach
  • 1 cup unsweetened plant milk (soy used in the recipe)
  • 1/2 cup vegan cream cheese (such as @violife_foods)
  • 1.5 tbsp white truffle oil
  • 2 tbsp olive oil
  • Salt and pepper

Preparation

  1. In a large skillet, melt vegan butter over medium heat until it turns slightly browned.

  2. Add the garlic cloves to the skillet and cook until fragrant. Remove the garlic from the pan and place it on a paper towel.

  3. Add chopped walnuts, unsweetened plant milk, vegan cream cheese, and white truffle oil to the skillet. Stir the ingredients until well blended.

  4. Introduce the gluten-free cauliflower gnocchi to the skillet and sear each side on medium heat for 1-2 minutes or until they turn golden brown.

  5. Toss in the baby spinach, season with salt and pepper, and cover the skillet for about two minutes to allow the spinach to wilt.

  6. Serve the browned butter and truffle cauliflower gnocchi immediately.
