Green Bean Salad with Cranberries and Walnuts
Ingredients
- 300g green beans
- 1 tbsp extra virgin olive oil
- 1 tbsp sesame seeds
- 1 tbsp dried cranberries
- 1 or 2 tbsp maple syrup
- a generous handful of walnuts
- Salt and pepper
Preparation
Blanch the green beans in boiling water for 3-5 minutes, then drain and cool under cold water
Toast the walnuts and sesame seeds in a dry skillet over medium heat until fragrant, about 2-3 minutes
In a large bowl, whisk together olive oil, maple syrup, salt, and pepper to create a dressing
Add the green beans, dried cranberries, toasted walnuts, and sesame seeds to the bowl and toss to combine
Serve immediately or chill in the refrigerator before serving
