Green Bean Salad with Cranberries and Walnuts

Ingredients

  • 300g green beans
  • 1 tbsp extra virgin olive oil
  • 1 tbsp sesame seeds
  • 1 tbsp dried cranberries
  • 1 or 2 tbsp maple syrup
  • a generous handful of walnuts
  • Salt and pepper

Preparation

  1. Blanch the green beans in boiling water for 3-5 minutes, then drain and cool under cold water

  2. Toast the walnuts and sesame seeds in a dry skillet over medium heat until fragrant, about 2-3 minutes

  3. In a large bowl, whisk together olive oil, maple syrup, salt, and pepper to create a dressing

  4. Add the green beans, dried cranberries, toasted walnuts, and sesame seeds to the bowl and toss to combine

  5. Serve immediately or chill in the refrigerator before serving
