Homemade Roasted Spice Rubbed Cauliflower and Chickpeas

Ingredients

  • 1 cup tahini
  • 2 teaspoons turmeric
  • 4 teaspoons sweet paprika
  • 2 teaspoons cumin
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 6 tablespoons water or 1/4 cup olive oil
  • fresh lime juice to taste
  • salt to taste
  • 1 head cauliflower
  • 3 cups cooked chickpeas or two 15-ounce cans

Preparation

  1. Mix together the tahini, turmeric, sweet paprika, cumin, garlic powder, chili powder, water or olive oil, lime juice, and salt to make the spice paste.

  2. Remove the stem and cut the cauliflower into large florets.

  3. Use hands to smear the spice paste to cover the cauliflower florets.

  4. Use the remaining paste to coat the cooked chickpeas.

  5. Roast everything at 400°F.

  6. Remove the chickpeas after about 15-20 minutes.

  7. Remove the cauliflower at the same time, cover it with a foil tent, and continue roasting until it is fork tender.
