Roasted Eggplant and Cod Dinner

Ingredients

  • eggplant slices
  • smoked paprika
  • garlic powder
  • salt
  • peppers
  • onion
  • zucchini
  • cod
  • baby kale
  • tahini

Preparation

  1. Sprinkle eggplant slices with smoked paprika, garlic powder, and salt.

  2. Roast them with peppers, onion, and zucchini at 425°F for about 30 minutes.

  3. Add cod for the last 11 minutes of roasting.

  4. Sauté baby kale while waiting.

  5. Drizzle tahini on top to finish.
