Roasted Eggplant and Cod Dinner
Ingredients
- eggplant slices
- smoked paprika
- garlic powder
- salt
- peppers
- onion
- zucchini
- cod
- baby kale
- tahini
Preparation
Sprinkle eggplant slices with smoked paprika, garlic powder, and salt.
Roast them with peppers, onion, and zucchini at 425°F for about 30 minutes.
Add cod for the last 11 minutes of roasting.
Sauté baby kale while waiting.
Drizzle tahini on top to finish.
