Zucchini Egg Cups

Ingredients

  • zucchini
  • cherry tomatoes
  • cheddar cheese
  • 9 eggs
  • 1/4 cup almond milk
  • salt
  • pepper
  • garlic powder
  • chili flakes

Preparation

  1. Spray a muffin tin with cooking spray, peel & thinly slice {I used a peeler} zucchini into 2 inch wide slices & place at the bottom of the tin

  2. Layer with chopped cherry tomatoes & cheddar cheese

  3. Combine 9 eggs + 1/4 cup almond milk, salt, pepper, garlic powder & chili flakes

  4. Pour mixture evenly into the muffin tin filling about 3/4 of the way; bake at 350 for 20 mins
