Zucchini Egg Cups
Ingredients
- zucchini
- cherry tomatoes
- cheddar cheese
- 9 eggs
- 1/4 cup almond milk
- salt
- pepper
- garlic powder
- chili flakes
Preparation
Spray a muffin tin with cooking spray, peel & thinly slice {I used a peeler} zucchini into 2 inch wide slices & place at the bottom of the tin
Layer with chopped cherry tomatoes & cheddar cheese
Combine 9 eggs + 1/4 cup almond milk, salt, pepper, garlic powder & chili flakes
Pour mixture evenly into the muffin tin filling about 3/4 of the way; bake at 350 for 20 mins
