Simple Egg and Vegetable Bowl for Lunch

Ingredients

  • 1 egg
  • olive oil
  • 1 sweet potato
  • 1/2 avocado
  • mushrooms
  • tomatoes
  • zucchini

Preparation

  1. Bake the sweet potato at 400°F for 45 minutes, then turn off the oven and leave it in for another 45 minutes to make it soft.

  2. Fry 1 egg in olive oil.

  3. Sauté the mushrooms, tomatoes, and zucchini.

  4. Assemble all components into a bowl.
