Simple Egg and Vegetable Bowl for Lunch
Ingredients
- 1 egg
- olive oil
- 1 sweet potato
- 1/2 avocado
- mushrooms
- tomatoes
- zucchini
Preparation
Bake the sweet potato at 400°F for 45 minutes, then turn off the oven and leave it in for another 45 minutes to make it soft.
Fry 1 egg in olive oil.
Sauté the mushrooms, tomatoes, and zucchini.
Assemble all components into a bowl.
