Vegan Banana Gingerbread Loaf
Ingredients
- 2 cups spelt flour
- 1.5 tsp ground ginger
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp sea salt
- 1 tsp baking soda
- 3 bananas
- 6 tbsp aquafaba (sub flax egg, not tested yet)
- 1/4 cup olive oil
- 1/2 cup nondairy milk
- 3 tbsp molasses
- 2 tbsp brown sugar
- 1/4 tsp allspice* (optional)
Preparation
Preheat oven to 350 F.
Add dry ingredients to a bowl: flour, ginger, cinnamon, nutmeg, cloves, sea salt, baking soda.
Whip aquafaba with a hand mixer for a minute. Mash banana with a fork and add to bowl with aquafaba, brown sugar, and olive oil. Whisk with a hand mixer.
Add to the dry ingredients. Add molasses and milk. Whisk it all together and bake in a 9 x 5 loaf pan on the lower third of the oven for 55-60 minutes or until a toothpick comes out clean from the center.
