Vegan Juicy Banana Bread
Ingredients
- 4 bananas as ripe as possible
- 1/2 cup sugar (I would use coconut sugar as a healthier alternative)
- 1 teaspoon vanilla bean extract
- 1 teaspoon sea salt
- 2 teaspoons cinnamon
- 1/3 cup rapeseed oil (or other vegetable oil)
- 1 3/4 cups flour (use gluten-free if desired)
- 1 teaspoon bicarbonate soda
Topping
- sprinkle of cane sugar
Preparation
Mash bananas to a chunky consistency, then add sugar, vanilla, salt, oil and mix together.
In a separate bowl, mix flour and bicarbonate soda.
Combine the banana mixture with the flour mixture and stir well with a spoon.
Pour the batter into a bread tin lined with baking paper and sprinkle cane sugar on top for crunch.
Bake at 160°C (325°F) for 30-40 minutes until the internal temperature reaches 96°C (200°F).
Tips
The recipe takes about 15 minutes to prepare and 40 minutes to bake.
It keeps well frozen or in the fridge for up to a week.
