Banana Bread with Walnuts
Ingredients
- 140g oatmeal flour
- 60g walnut flour
- 4 bananas
- 8 dates
- 1 flaxseed egg (1 tbsp ground flaxseed + 2 tbsp water)
- 1 tbsp peanut butter
- 1/2 apple
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon gingerbread spice
- 1 handful of walnuts
- 1 tbsp coconut oil
- approx. 100 ml almond milk (or alternative)
Preparation
Prepare the flax seed egg.
Preheat the oven to 180 degrees.
Process the oatmeal into flour in a mixer.
Then mix in a bowl with the walnut flour, baking powder and spices.
Puree 3 bananas, peanut butter, apple, dates in a blender; if necessary soak dates briefly in hot water beforehand.
Add to the dry ingredients and stir.
Melt the coconut oil in a water bath and add it.
Depending on how dry the mass is now, add some plant-based milk until it becomes a sticky dough.
Put it in a baking tin, ideally line it with baking paper, cut the last banana in half and place on top and bake for 35-40 minutes.
