Vegan Blueberry Banana Bread

Ingredients

  • 2 large bananas
  • 1/4 cup coconut oil, melted
  • 1/2 lemon, juiced
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1.5 cups ground almonds
  • 1.5 cups tiger nut flour
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup almond milk
  • 1 cup blueberries
  • 4 tbsp flaked almonds

Preparation

  1. Preheat oven to 180°C and line a loaf tin

  2. Mash bananas in a medium bowl until smooth

  3. Add coconut oil and lemon juice to bananas and mix well

  4. In a large bowl, combine all dry ingredients apart from the blueberries

  5. Add in the bananas, oil and lemon juice and slowly pour in the milk until you have a thick batter

  6. Mash a 1/4 cup of blueberries in a cup with a fork and add to the batter along with the rest of the whole blueberries, saving some for the top

  7. Pour into prepared loaf tin and top with remaining blueberries and flaked almonds

  8. Bake for 1 hour, until golden and a toothpick comes out clean

  9. Allow to cool completely before cutting
