Crispy Fried Cauliflower with Spicy Sauce
Ingredients
- 1/4 cup maida
- 1/2 cup rice flour
- some chili flakes
- salt
- cold water as needed
- cauliflower florets
- 2 green chilies
- 3 garlic cloves
- small piece of ginger
- black pepper
- 2 tablespoons soy sauce
- 1 teaspoon vinegar
- 1 tablespoon chili sauce
- 1 teaspoon sugar
Preparation
Add cold water to the dry ingredients and mix to make a semi-solid batter
In a separate bowl, mix soy sauce, vinegar, chili sauce, and sugar
Dip large pieces of cauliflower in the batter and deep fry at medium heat until crispy
Remove most of the oil from the pan, leaving a few drops
Cook slit green chilies, chopped garlic, and chopped ginger until garlic turns pink on low to medium heat and add pepper
Add the sauce mixture and heat until it bubbles
Toss the fried cauliflower in the sauce mixture
Tips
Use fresh cauliflower for the best texture, especially in winter when it's in season
Fry at medium heat without rushing to ensure crispiness throughout
