Basima Semolina and Coconut Cake
Ingredients
- 1/2 cup coarse semolina
- 1/2 cup flour
- 2 1/4 cups fine coconut
- 1/2 cup fine sugar
- 1/2 cup melted ghee
- 1/4 cup water
- 1/4 cup milk
- 1 teaspoon rose water
For serving
- Sugar syrup (sherbet)
For garnish
- Grated coconut
Preparation
Set the rack in the middle of the oven and preheat to 180°C.
Prepare a 9-inch pan by greasing it with ghee and set aside.
In a mixer bowl, combine semolina, flour, coconut, sugar, ghee, water, milk, and rose water. Mix on medium speed until a dough forms similar to that of namoura or basbousa.
Place the dough in the pan and smooth the surface with the palm of your hand to make it even and smooth.
Bake in the oven for 20 minutes or until golden brown.
Remove from the oven and immediately add the sugar syrup. Allow it to absorb, cool, and set, then flip onto a serving plate.
Cool completely before serving and garnish with grated coconut as desired.
