Homemade Spiced Gingerbread Muffins

Ingredients

  • 2 1/2 cups plain flour
  • 1/2 cup dark brown sugar
  • 1 1/2 tsp baking powder
  • 2 1/2 tsp ground cinnamon
  • 2 1/2 tsp ground ginger
  • 1/4 tsp sea salt
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup olive oil
  • 1/3 cup honey
  • 1/3 cup + 1 Tbsp milk

Preparation

  1. Preheat the oven to 180C and line a muffin tray with 9 muffin cups.

  2. Put a sieve over a large bowl and sieve in the flour, baking powder, cinnamon and ginger. Add the sugar and salt and mix well to ensure the sugar is well distributed.

  3. In another bowl whisk together the eggs, vanilla, oil, honey and milk.

  4. Add the wet ingredients to the dry and mix with a rubber spatula just until combined. Don’t over-mix.

  5. Distribute the batter evenly between the 9 cases and bake for 28-30 minutes or until an inserted knife comes out clean.

Notes

  1. Baking these muffins fills the house with a wonderful aroma that evokes Christmas memories of family, tea, board games, and cozy movie nights.
