Lemon Olive Oil Cake
Ingredients
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 3/4 cups sugar
- 4 teaspoons fresh lemon zest
- 1 cup light olive oil
- 1/4 cup corn oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups milk
- 1/4 cup fresh lemon juice
Sauce
- 1 1/4 cups powdered sugar
- 1 tablespoon milk
- 1 tablespoon lemon juice
Garnish
- Lemon zest
Preparation
Position the middle rack in the oven and preheat the oven to 170 degrees Celsius
Bring a 9-inch round cake pan, grease it with butter, place parchment paper in the bottom, and grease the paper with butter
Sift the flour, salt, baking soda, and baking powder, and set aside
Place sugar and lemon zest in a bowl and rub them between your fingertips to infuse with flavor
In the mixer bowl, place olive oil, corn oil, eggs, and using an electric mixer, beat until homogeneous
Add milk and lemon juice, and continue beating until combined
Add the sugar mixture and continue beating until combined
Add the flour mixture gradually, using a hand whisk, stir to mix and do not overmix
Pour the batter into the pan and bake for 50 to 60 minutes until the cake is done, then let it cool completely in the pan
For the sauce, in a bowl place powdered sugar, milk, and lemon juice, stir to combine, spread over the cake, and garnish with lemon zest
