Matcha Tea Cake with Matcha & Pandan Buttercream

Ingredients

For the Cake

  • Matcha tea
  • Flour
  • Sugar
  • Eggs
  • Butter
  • Baking powder
  • Milk
  • Vanilla extract

For the Matcha & Pandan Buttercream

  • Matcha powder
  • Pandan flavoring
  • Butter
  • Powdered sugar
  • Milk or cream

Preparation

Prepare the Cake

  1. Preheat the oven to the specified temperature.

  2. In a bowl, cream together butter and sugar until light and fluffy.

  3. Add eggs one at a time, beating well after each addition.

  4. Sift in flour and matcha powder, then add baking powder. Mix until just combined.

  5. Gradually add milk and vanilla extract, mixing until the batter is smooth.

  6. Pour the batter into greased cake pans and bake until a toothpick inserted comes out clean.

  7. Allow the cakes to cool completely before assembling.

Make the Matcha & Pandan Buttercream

  1. In a bowl, beat butter until creamy and smooth.

  2. Gradually add powdered sugar, matcha powder, and pandan flavoring. Mix until well combined.

  3. If needed, add milk or cream to achieve the desired consistency and flavor.

Assemble the Cake

  1. Place one cake layer on a serving plate.

  2. Spread a layer of matcha and pandan buttercream over the cake.

  3. Top with the second cake layer and frost the top and sides with more buttercream.

  4. Decorate the cake as desired with additional matcha powder or edible decorations.
