Moist Cherry Brownies with Dark Chocolate

Ingredients

  • 1 jar dark sweet cherries (drained weight: 350g)
  • 300 g dark chocolate
  • 125 g butter
  • 3 eggs (medium)
  • 200 g brown sugar
  • 170 g all-purpose flour
  • a pinch of salt
  • 3 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • butter for greasing the pan

Preparation

  1. Drain the cherries in a colander and let them drain well

  2. Chop the dark chocolate and melt it with butter over a double boiler on low heat

  3. Let the chocolate mixture cool for about 10 minutes

  4. Grease a brownie pan (approximately 28 x 23 cm) or line it with parchment paper

  5. Preheat the oven to 180°C (convection: 160°C)

  6. Whisk the eggs with brown sugar until combined

  7. Stir the cooled chocolate mixture into the egg mixture

  8. Mix the flour, salt, baking powder, and cocoa powder in a separate bowl

  9. Add the dry ingredients to the batter and stir until just combined

  10. Pour the batter into the prepared pan and spread it evenly

  11. Pat the drained cherries dry with a kitchen towel

  12. Place the cherries on the batter and gently press them into the batter with your hands

  13. Bake in the preheated oven for 30 to 35 minutes

Tips

  1. Insert a toothpick to test for doneness; it should come out with a few moist crumbs but no wet batter
