Easy Homemade Chocolate Cream Cheese Muffins
Ingredients
Filling
- 200 g double cream cheese
- 2 tbsp sugar
- 1 packet vanilla sugar
Batter
- 2 large eggs
- 170 g brown sugar
- 100 ml neutral vegetable oil (e.g., sunflower oil)
- 200 g sour cream
- 200 g all-purpose flour (Type 405)
- 2 tsp baking powder
- 4 tbsp cocoa powder
- a pinch of salt
Glaze
- 200 g dark chocolate
Preparation
Preheat the oven to 180°C conventional or 160°C fan-forced
Line a 12-cup muffin tin with paper liners
Mix the cream cheese, sugar, and vanilla sugar in a small bowl until smooth for the filling
Beat the eggs, brown sugar, oil, and sour cream until creamy for the batter
Whisk together the flour, baking powder, cocoa powder, and salt in a separate bowl
Add the dry ingredients to the wet ingredients and mix until well combined
Spoon 1 teaspoon of batter into each liner and spread slightly up the sides
Add 1 teaspoon of the cream cheese mixture to the center of each
Fill the liners with the remaining batter using a piping bag
Smooth the tops with a teaspoon
Bake for 25-30 minutes until a toothpick inserted comes out clean
Let the muffins cool completely in the pan
Chop the dark chocolate and melt over a double boiler on low heat for the glaze
Spread the melted chocolate over the cooled muffins using a teaspoon or pastry brush
Allow the glaze to set
Tips
These muffins can be prepared the day before and stored under a cake dome at room temperature to prevent drying out
