Kinder Chocolate Muffins with Soft Crumb

Ingredients

  • 125 g soft butter
  • 120 g sugar
  • 1 packet vanilla sugar
  • 2 medium eggs
  • 200 g sour cream
  • 250 g all-purpose flour (Type 405)
  • 2 tsp baking powder
  • 6 tbsp milk
  • 250 g Kinder chocolate bars

Preparation

  1. Cream butter with sugar and vanilla sugar until smooth

  2. Add eggs one at a time, then add sour cream and mix

  3. Combine flour and baking powder, then add to the batter with milk; mix well

  4. Preheat oven to 180°C conventional (160°C fan)

  5. Line a 12-cup muffin tin with muffin cups or use a silicone mold rinsed with cold water

  6. Chop Kinder chocolate bars coarsely

  7. Fold 200g of chopped chocolate into the batter

  8. Fill each muffin cup two-thirds full with batter using an ice cream scoop or two spoons

  9. Distribute remaining chocolate on top of muffins and press lightly

  10. Bake for about 25 minutes until golden brown

Tips

  1. Do not overfill the muffin cups to prevent batter from overflowing

  2. Fill cups slightly less and bake excess batter in additional silicone cups or high-rimmed muffin cups to bake all at once
