No Bake Matcha Green Tea Cheesecake
Ingredients
Crust
- 200g whole wheat butter cookies
- 100g butter
Filling
- 8 sheets gelatin
- 1 tbsp lemon juice
- 400g cream cheese
- 500g Greek yogurt (10% fat)
- 200g sugar
- 3 tbsp matcha powder
- 200g heavy cream
Garnish
- Matcha powder for dusting
Preparation
Line a springform pan with parchment paper
Melt butter in a small pot
Grind whole wheat cookies into fine crumbs in a blender
Pour the melted butter over the cookie crumbs and mix
Transfer the mixture to the springform pan
Press the mixture into a compact base using a glass
Chill in the refrigerator for 30 minutes
Soak gelatin sheets in cold water for 5 minutes
Mix yogurt, cream cheese, and sugar until creamy
Add matcha powder and mix until combined
Remove the gelatin from the water and melt with lemon juice in a pot without boiling
Stir 2 tablespoons of the matcha mixture into the melted gelatin
Gradually stir the gelatin mixture into the matcha cream
Whip the heavy cream until stiff peaks form
Gently fold the whipped cream into the matcha cream
Pour the mixture over the chilled crust
Smooth the surface
Chill for at least 4 hours
Dust with matcha powder before serving
Tips
Yields about 16 slices and keeps for at least 3 days in the refrigerator
