No-Bake Apricot Cheesecake Cups
Ingredients
Base
- 2 cups ground biscuits
- 2 tablespoons melted butter
Top layer
- 1 cup chopped dried apricots
- 1/4 cup sugar
- 2 cups water
Cheese layer
- 200 grams cream cheese
- 1 cup liquid cream
- 1/2 cup powdered sugar
Preparation
Prepare the dishes or cups you want to use.
In a food processor, grind the biscuits, add the butter and mix until combined with the biscuits.
Distribute the biscuit mixture in the dishes and press lightly to make an even layer.
In a mixing bowl, place the cheese, cream, and fine sugar, attach the whisk attachment and run the mixer on medium speed to blend the ingredients.
Distribute the cheese mixture over the cups, then sprinkle some biscuits on the cheese.
Apricot sauce: In a saucepan, place the apricots, sugar, and water then let it on the fire for about 10 minutes until the mixture is homogeneous, mash it a little to make it like sauce.
Distribute the apricot sauce over the cups. Then distribute some pistachios or nuts as desired.
