No-Bake Cheesecake Cups with Three Flavors

Ingredients

  • 1 small Digestive biscuit packet
  • 1 small Glucose biscuit packet
  • 2.5 teaspoons butter at room temperature or melted
  • 220 grams Cream Cheese
  • 1 teaspoon vanilla essence
  • 3 tablespoons icing sugar
  • 1 cup Whipped Cream
  • 1 Lemon Zest
  • 1 teaspoon Strawberry Jam
  • Some chopped blanched pistachio
  • Cling film or wrapping plastic to help demould

Preparation

  1. In a bowl, take crushed digestive and glucose biscuits mix

  2. Add 2.5 teaspoons butter melted and mix well

  3. Take cupcake pan or any small bowl and place cling film in it

  4. Fill some stuffing inside the cup and make shape of cup by sticking biscuit mix onto the wall along with cling film

  5. Place it in freezer to set for 15 minutes

  6. Meanwhile, make cream cheese filling

  7. Take 200-220 grams cream cheese and beat it nicely with electric beater

  8. Add 1 teaspoon vanilla essence

  9. Add 3 tablespoons icing sugar and beat nicely

  10. Add 1 cup whipped cream to make the mixture lighter otherwise it will be very dense cheesecake and beat nicely

  11. The vanilla mixture is ready

  12. Add 1 lemon zest for flavor, mix and fill two cups with this filling

  13. Take 1 teaspoon of strawberry or raspberry jam and mix with cream cheese filling gently giving it a swirl and fill this strawberry filling in other two cups

  14. In another small bowl take some filling and add pistachio small pieces blanched and fill two cups with pista filling

  15. Garnish with lemon zest on lemon cheesecake cups, with pistachio on the pista cheesecake cups and strawberry jam mix on strawberry cheesecake cup

  16. Refrigerate for 2 hours

  17. Remove cling film and serve the cheesecake cups
