Lotus Biscoff No-Bake Cheesecake
Ingredients
- 400g cream cheese
- 1 teaspoon vanilla essence
- 125ml whipping cream
- 2 tablespoons icing sugar
- 90g butter
- 200g lotus biscoff spread
- 15 lotus biscoff biscuits
Preparation
Base
Crush the lotus biscoff biscuits into crumbs.
Melt the butter on the stove and mix with the crushed biscuits.
Press the mixture into the pan to form the base.
Filling
Mix cream cheese, vanilla essence, and 2 tablespoons of lotus biscoff spread until smooth.
In a separate bowl, whip the whipping cream with 2 tablespoons of icing sugar until fluffy.
Combine the cream cheese mixture with the whipped cream.
Assembly and topping
Pour the filling mixture over the base.
Melt the remaining lotus biscoff spread and pour it over the cheesecake as topping.
Chill the cheesecake in the refrigerator and serve the next day.
