Fluffy Steamed Cake with Cheese Melt

Ingredients

Cake batter

  • 5 eggs
  • 1 tablespoon ovalette
  • 1 cup sugar
  • essence or emulsifier as desired
  • 2 cups flour
  • 1 tablespoon baking soda
  • 1 tablespoon baking powder
  • 1/4 cup oil

Cheese filling

  • 500g cream cheese
  • 3/4 tin condensed milk
  • 1/2 cup fresh milk
  • 1 cup whipping cream

Optional ganache

  • 250g chocolate
  • 1 cup whipping cream

Preparation

  1. Mix eggs, ovalette, sugar, and essence until fluffy, expanded, and forms peaks at high speed.

  2. Turn off the mixer.

  3. Gradually add flour, baking soda, and baking powder to the mixture using a spatula until well incorporated.

  4. Fold in 1/4 cup oil until fully combined.

  5. Pour batter into greased pans; a 6-inch pan yields about 4 cakes and an 8-inch pan yields about 2.

  6. Steam until fully cooked.

  7. For the cheese filling, blend cream cheese, 3/4 tin condensed milk, 1/2 cup fresh milk, and 1 cup whipping cream until smooth and well combined.

  8. Whip 2 cups fresh cream until thick, then mix it into the cheese mixture; if too thick, add more fresh milk.

  9. Grate cheddar cheese for topping or incorporation.

  10. Optionally, for a richer version, add 1/2 cup ganache to the cheese mixture.

  11. To prepare ganache, double boil 250g chocolate with 1 cup whipping cream until smooth.
