Moist Chocolate Cake with Mascarpone Cream Filling

Ingredients

Cake batter

  • 110 g dark chocolate
  • 90 g butter
  • 3 tbsp oil
  • 2 large eggs
  • 150 g sugar
  • 90 g all-purpose flour
  • 35 g cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 150 g sour cream
  • butter, for greasing the pan
  • flour, for dusting the pan

Mascarpone cream

  • 250 g mascarpone cheese
  • 2 packets vanilla sugar
  • 3 tbsp heavy cream

Decoration

  • 100 g dark chocolate couverture

Preparation

  1. Grease a 20 cm springform pan and lightly dust with flour

  2. Preheat the oven to 180°C conventional (160°C fan)

  3. Melt the chocolate with butter and oil over a water bath and let cool slightly

  4. In a mixing bowl, beat eggs and sugar until foamy

  5. Add the chocolate mixture to the egg mixture and mix well

  6. Mix and sift the dry ingredients

  7. Add the dry ingredients to the egg mixture and combine

  8. Add the sour cream

  9. Pour the cake batter into the pan and bake in the preheated oven for about 35 minutes

  10. Let the chocolate cake cool and cut it horizontally in half

  11. Beat mascarpone with vanilla sugar and cream until smooth

  12. Spread the cream on the lower cake layer and gently press the top layer on

  13. Chill the cake for 2 hours

  14. Melt the dark chocolate couverture over a water bath and generously spread over the cake
