Protein-Packed Black Bean Cookie Dough

Ingredients

  • 1 can black beans (rinsed & drained)
  • 3/4 cup cacao or cocoa powder
  • 1 tsp vanilla essence
  • 1/3 cup coconut sugar
  • 2 tbsp coconut oil
  • 1/4 cup chopped dark chocolate
  • 1/4 tsp sea salt (optional)

Preparation

  1. Add all ingredients except chocolate to a food processor and pulse until everything is completely combined into a dough.

  2. Scoop mixture into tupperware and roughly mix chocolate pieces into dough.

  3. Press dough down with hands and refrigerate until ready to eat.

Tips

  1. Cookie dough can be scooped, used to top cereals or eaten straight from the container as a snack.
