Pumpkin Cookie Dough with Peanut Butter Sauce

Ingredients

  • 1 can chickpeas
  • 1 cup pumpkin puree
  • 60g low fodmap protein
  • 1/4 cup nut butter
  • 1/4 cup maple syrup
  • 1/2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 2 tsp stevia sweetener
  • 1/3 cup coconut flour
  • 1/3 cup oat flour (optional)
  • 1/2 cup vegan chocolate chips

Preparation

  1. Add all the ingredients into a high speed food processor (except the chocolate chips) until the mixture is smooth and well combined. If the mixture is still a little runny, add some extra coconut or oat flour until the mixture is thick.

  2. Add your chocolate chips to the bowl and fold through the cookie dough mixture. Transfer into a bowl or cup and top with extra choc chips and peanut butter.
