Pumpkin Cookie Dough with Peanut Butter Sauce
Ingredients
- 1 can chickpeas
- 1 cup pumpkin puree
- 60g low fodmap protein
- 1/4 cup nut butter
- 1/4 cup maple syrup
- 1/2 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 2 tsp stevia sweetener
- 1/3 cup coconut flour
- 1/3 cup oat flour (optional)
- 1/2 cup vegan chocolate chips
Preparation
Add all the ingredients into a high speed food processor (except the chocolate chips) until the mixture is smooth and well combined. If the mixture is still a little runny, add some extra coconut or oat flour until the mixture is thick.
Add your chocolate chips to the bowl and fold through the cookie dough mixture. Transfer into a bowl or cup and top with extra choc chips and peanut butter.
