Pumpkin Chocolate Chunk Cookies

Ingredients

  • 1 cup (100g) oat flour
  • 2/3 cup (75g) coconut flour
  • 3 tbsp pumpkin puree
  • 1 small mashed banana
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla essence
  • 2 eggs (or flaxseed eggs for vegan)
  • 70g of dark chocolate cut into chunks (or chocolate chips)

Preparation

  1. Preheat the oven to 180 degrees Celsius and line a baking tray with baking paper.

  2. In a bowl, mix together the banana, pumpkin puree, vanilla, cinnamon, nutmeg and eggs. Then fold in the chocolate pieces.

  3. Add the oat flour, and then the coconut flour, achieving a dough-like consistency.

  4. Shape the mixture into approximately 8 cookies and place on the baking paper.

  5. Bake in the oven for 15 minutes until the cookies start to look golden. Allow to cool or enjoy warm.
