Pumpkin Chocolate Chunk Cookies
Ingredients
- 1 cup (100g) oat flour
- 2/3 cup (75g) coconut flour
- 3 tbsp pumpkin puree
- 1 small mashed banana
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla essence
- 2 eggs (or flaxseed eggs for vegan)
- 70g of dark chocolate cut into chunks (or chocolate chips)
Preparation
Preheat the oven to 180 degrees Celsius and line a baking tray with baking paper.
In a bowl, mix together the banana, pumpkin puree, vanilla, cinnamon, nutmeg and eggs. Then fold in the chocolate pieces.
Add the oat flour, and then the coconut flour, achieving a dough-like consistency.
Shape the mixture into approximately 8 cookies and place on the baking paper.
Bake in the oven for 15 minutes until the cookies start to look golden. Allow to cool or enjoy warm.
