Baked Banana Cookie Dough

Ingredients

  • 1 firm medium-large banana
  • 1 tablespoon natural peanut butter
  • 2 tablespoons or 30ml maple syrup
  • 1-2 (12g) stevia
  • 25g low FODMAP protein
  • 10g oat flour
  • 10g coconut flour
  • 15-20g chopped vegan chocolate
  • pinch of vanilla extract and salt

Preparation

  1. Preheat the oven to 180°C.

  2. Mash the banana well, adding water if it is too unripe.

  3. Add peanut butter, maple syrup, stevia, and vanilla, then combine well.

  4. Fold in protein and flours with a pinch of salt.

  5. Once combined, lightly spray two ramekins or small baking dishes.

  6. Divide the mixture equally into each dish and top with chocolate chunks.

  7. Bake for 12-15 minutes until slightly golden on top but still mushy inside.

  8. Let cool for a few minutes.

  9. Serve, optionally adding more salt and coconut yoghurt on top.
