Baked Banana Cookie Dough
Ingredients
- 1 firm medium-large banana
- 1 tablespoon natural peanut butter
- 2 tablespoons or 30ml maple syrup
- 1-2 (12g) stevia
- 25g low FODMAP protein
- 10g oat flour
- 10g coconut flour
- 15-20g chopped vegan chocolate
- pinch of vanilla extract and salt
Preparation
Preheat the oven to 180°C.
Mash the banana well, adding water if it is too unripe.
Add peanut butter, maple syrup, stevia, and vanilla, then combine well.
Fold in protein and flours with a pinch of salt.
Once combined, lightly spray two ramekins or small baking dishes.
Divide the mixture equally into each dish and top with chocolate chunks.
Bake for 12-15 minutes until slightly golden on top but still mushy inside.
Let cool for a few minutes.
Serve, optionally adding more salt and coconut yoghurt on top.
