Cookie Dough Baked Oats

Ingredients

  • 40g oat flour
  • 60g tinned chickpeas, skins removed
  • 35g vanilla vegan protein
  • 1tbsp milled flaxseeds
  • 1/2 tsp baking powder
  • 1/2 banana, mashed
  • 130ml unsweetened almond milk
  • 15g dark chocolate chips

Preparation

  1. Preheat the oven to 160 degrees celsius

  2. Blend all the ingredients except the chocolate chips together

  3. Stir in half of the chocolate chips and transfer the mixture to an ovenproof ramekin or bowl

  4. Top with the remaining chocolate chips

  5. Bake for 20-25 mins

  6. Allow to cool slightly
