Dark Chocolate Ginger Breakfast Cookies

Ingredients

  • 1 small mashed banana
  • 2 eggs
  • 1 tbsp melted coconut oil
  • 1 cup oats
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/2 cup ground almonds + 1 tbsp
  • 1 tsp vanilla essence
  • 2 tbsp maple syrup
  • 50g of dark chocolate broken up into chunks

Preparation

  1. Preheat the oven to 180 degree Celsius and line a baking tray with baking paper

  2. Mix the eggs in a bowl with the banana, coconut oil, maple syrup and vanilla

  3. Add all the dry ingredients until you achieve a dough like consistency

  4. Fold in the chocolate

  5. Yield into 8 cookies and place on the baking paper

  6. Bake for 10-12 mins and enjoy
