Coconut Dark Chocolate Cookies

Ingredients

  • 2 eggs
  • 200 g honey
  • 100 g oil of your choice
  • 230 g whole grain flour
  • 2 g baking soda
  • 3 g baking powder
  • Pinch of salt
  • 1 tbsp cinnamon
  • Dark chocolate
  • Shredded coconut

Preparation

  1. Preheat your oven to 210°C.

  2. Beat the eggs well and mix in the honey and oil.

  3. Add the presieved flour, baking soda, baking powder, salt, and cinnamon. Mix well.

  4. Place baking paper on a baking tray.

  5. Use a spoon to form cookies on the tray, leaving space between each.

  6. Bake for 10 minutes or until golden brown.

  7. Let the cookies cool on a rack.

  8. Melt some chocolate in the microwave, being careful not to burn it. You can add coconut oil to help it melt easier.

  9. Dip the cookies in the melted chocolate, then sprinkle with shredded coconut.

  10. Chill the cookies in the fridge for a while before enjoying.
