Vegan Pumpkin Cookie Dough
Ingredients
- 1 can of chickpeas, drained
- 7 medjool dates, pitted and soaked
- 1/3 cup pumpkin puree
- 1/2 cup oat flour
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp clove
- 1/8 tsp sea salt
Optional add-ins
- 1/2 bar chopped Hukitchen chocolate
Preparation
Add chickpeas, dates, pumpkin puree, and vanilla extract into a food processor and blend
Add in oat flour and all of your spices and blend until you get a dough like mixture
If the mixture is too sticky or wet, add in more flour one tablespoon at a time and blend again
When you have reached your desired texture and consistency, fold in your chopped chocolate and press into a small baking tray lined with parchment paper and store in the fridge or freezer
