Vegan Pumpkin Cookie Dough

Ingredients

  • 1 can of chickpeas, drained
  • 7 medjool dates, pitted and soaked
  • 1/3 cup pumpkin puree
  • 1/2 cup oat flour
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp clove
  • 1/8 tsp sea salt

Optional add-ins

  • 1/2 bar chopped Hukitchen chocolate

Preparation

  1. Add chickpeas, dates, pumpkin puree, and vanilla extract into a food processor and blend

  2. Add in oat flour and all of your spices and blend until you get a dough like mixture

  3. If the mixture is too sticky or wet, add in more flour one tablespoon at a time and blend again

  4. When you have reached your desired texture and consistency, fold in your chopped chocolate and press into a small baking tray lined with parchment paper and store in the fridge or freezer
