Healthy Pumpkin Truffles for Halloween

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 8 medjool dates, pitted
  • 1/2 cup oat flour
  • 1/4 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice
  • 1/8 tsp salt

Chocolate coating

  • a bar of chocolate
  • a little bit of coconut oil

Preparation

  1. Blend all the truffle ingredients together in a food processor until you reach a thick dough-like consistency.

  2. Adjust your batter by adding a little more pumpkin puree if it's too dry or a little oat flour if it's too wet.

  3. Scoop out 2 tablespoons and roll into little truffle shapes.

  4. Place them on a parchment-lined baking tray and freeze for 20 minutes.

  5. In the meantime, melt your chocolate with a little bit of coconut oil.

  6. Dunk your truffles into the chocolate.

  7. Top with some chunky flakes of sea salt and enjoy.
