Healthy Pumpkin Truffles for Halloween
Ingredients
- 1 can of chickpeas, drained and rinsed
- 8 medjool dates, pitted
- 1/2 cup oat flour
- 1/4 cup pumpkin puree
- 1 tsp vanilla extract
- 1 tsp pumpkin spice
- 1/8 tsp salt
Chocolate coating
- a bar of chocolate
- a little bit of coconut oil
Preparation
Blend all the truffle ingredients together in a food processor until you reach a thick dough-like consistency.
Adjust your batter by adding a little more pumpkin puree if it's too dry or a little oat flour if it's too wet.
Scoop out 2 tablespoons and roll into little truffle shapes.
Place them on a parchment-lined baking tray and freeze for 20 minutes.
In the meantime, melt your chocolate with a little bit of coconut oil.
Dunk your truffles into the chocolate.
Top with some chunky flakes of sea salt and enjoy.
