Pumpkin Choc Chip Chickpea Cookie Dough

Ingredients

  • ✨ 1/2 a can of chickpeas (or a 200g can)
  • ✨ few tbsp pumpkin purée
  • ✨ date syrup (to taste)
  • ✨ 1/2 - 1 tsp pumpkin pie spice
  • ✨ 1-2 tbsp almond flour
  • ✨ 2 tbsp oat flour
  • ✨ 1 tbsp gingerbread peanut butter (or plain)
  • ✨ salt
  • ✨ dark chocolate chips

Preparation

  1. Wash and drain the chickpeas and place all of the above ingredients in a food processor (or blender) and pulse until smooth (you may need more almond/oat flour until it forms a dough ball)

  2. Stir through the choc chips so they’re evenly distributed

  3. I had mine for breakfast with a lush fruit platter consisting of jackfruit, papaya & lime, persimmon, apple and some grapes
