Pumpkin Choc Chip Chickpea Cookie Dough
Ingredients
- ✨ 1/2 a can of chickpeas (or a 200g can)
- ✨ few tbsp pumpkin purée
- ✨ date syrup (to taste)
- ✨ 1/2 - 1 tsp pumpkin pie spice
- ✨ 1-2 tbsp almond flour
- ✨ 2 tbsp oat flour
- ✨ 1 tbsp gingerbread peanut butter (or plain)
- ✨ salt
- ✨ dark chocolate chips
Preparation
Wash and drain the chickpeas and place all of the above ingredients in a food processor (or blender) and pulse until smooth (you may need more almond/oat flour until it forms a dough ball)
Stir through the choc chips so they’re evenly distributed
I had mine for breakfast with a lush fruit platter consisting of jackfruit, papaya & lime, persimmon, apple and some grapes
