Vegan Paleo Pumpkin Cookie Dough
Ingredients
- 3/4 cup pumpkin puree
- 1/4 cup liquid sweetener (I used @madhavafoods amber agave)
- 1/4 cup nut/seed butter
- 1 tsp vanilla extract
- 2/3 cup coconut flour
- 2 tsps pumpkin pie spice
- 1/4 tsp salt
- 2-4 tbsp non-dairy milk (as needed)
- 1/4 cup chopped dark chocolate (I used @hukitchen Gems)
- 1/4 cup chopped pecans
Preparation
Whisk together the wet ingredients.
Add the dry ingredients.
Mix to form a thick dough adding milk if needed.
Fold in the pecans and chocolate chips.
Press into a rectangle, slice into small squares, and eat.
