Vegan Paleo Pumpkin Cookie Dough

Ingredients

  • 3/4 cup pumpkin puree
  • 1/4 cup liquid sweetener (I used @madhavafoods amber agave)
  • 1/4 cup nut/seed butter
  • 1 tsp vanilla extract
  • 2/3 cup coconut flour
  • 2 tsps pumpkin pie spice
  • 1/4 tsp salt
  • 2-4 tbsp non-dairy milk (as needed)
  • 1/4 cup chopped dark chocolate (I used @hukitchen Gems)
  • 1/4 cup chopped pecans

Preparation

  1. Whisk together the wet ingredients.

  2. Add the dry ingredients.

  3. Mix to form a thick dough adding milk if needed.

  4. Fold in the pecans and chocolate chips.

  5. Press into a rectangle, slice into small squares, and eat.
