Pumpkin Chocolate Chip Loaf

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup almond butter
  • 3/4 cup coconut sugar
  • 1 tsp vanilla extract
  • 2 cups cassava flour (I used @edwardandsons)
  • 2 tsp baking powder
  • 1 tbsp pumpkin pie spice
  • 1/4th tsp salt
  • 1/2 cup chocolate chips

Preparation

  1. Preheat the oven to 350ºF

  2. Whisk together the pumpkin, almond butter, coconut sugar, and vanilla

  3. Add the cassava flour, baking powder, spice, and salt

  4. Mix to form a thick dough

  5. Fold in the chocolate chips

  6. Transfer to a greased loaf pan

  7. Smooth the top (and add a few extra chocolate chips!)

  8. Bake for 45-50 minutes

  9. Cool, then slice and eat!
